Zoo Trip

Here is a glimpse at our trip to the Woodland Zoo last month during spring break, the one that I needed to blog about for the last month. It was rainy and slightly cold, but we had a absolute blast. Maddie is an animal freak, she was very at home at the zoo.I love my camera, this picture of the lion was through foggy glass and super far away.I'm pretty sure Maddie would still have been smiling if there hadn't been glass seperating them and the jaguars.Maddie LOVED the peguins and the snakes, but I forgot to post a picture. I tried to get her to look at the emormous orangutan, but she was too interested in the python. Jon said she was weird for liking the creepy snakes.
We got growled/howled at by an alligator. That was interesting, everyone came running to see what was going on. I had just been pointing it out to Maddie when some stranger said he's telling you to throw your kid on over. I think I just gave that person a weird look. So fun and I can't wait to go back to Seattle.

What's For Dinner?

Chipotle Pork Tacos


1 lb pork tenderloin, sliced thin

1 1/2 tsp grated lime zest


1 Tbs lime juice


1/2 tsp (heaping) dry oregano


1 tsp brown sugar


2 Tbs of adobo sauce in Embasa Chipotle Peppers can found in Mexican aisle (scoop around peppers)


2 tsp bottled minced garlic


1/4 salt


3 tsp olive oil


1 C red onion (thinly sliced)


6 (6 inch) tortillas


Avacado (chopped) or sour cream


Chopped cilantro


Recommended: Cilantro lime rice

Combine thinly sliced pork, lime zest, lime juice, oregano, salt, brown sugar, adobo sauce, and garlic in zip lock. Set aside. Heat a large skillet over medium heat and add 1 tsp olive oil. Add onions and saute for 4 min or till tender. Remove from pan and set aside. Add 2 tsp olive oil to pan and add pork mixture. Saute for 3-4 min or till no longer pink. Add pork to onions. Warm & toast tortillas in small fry pan w/ pam spray. Fill tortillas, top with avacado (or sour cream), and cilantro lime rice. YUM.
Loved this I would use a different Cilantro Lime Rice recipe so I didn't post it. I actually made mine with Minute Rice and stirred in alittle spray butter, lime juice & zest, cilantro, garlic salt, salt & pepper. HA! This was fairly quick, but I had defrosted my pork (which is pre-cut for stir fry) and I used minute rice. It was a yummy roasted pepper flavor and the avacado was the perfect touch.

Hello Motivation

I'm in love. I decided that I would set a goal, of course a fitness goal, and if I reached it I would allow myself to indulge in a new swimsuit this summer. Why do I love it, could be the rouching (if that's even how you spell it) or that its actually tulle on the outside layer. I don't even know if it will look good on me, but for now its just the motivation I need. Cost...is ridicously or else I probably already would have bought it. I haven't quite decided what my actual goal should be. I did buy a new ACURATE scale with a Amazon gift card and there's a 5k or 10k coming up in May. Maybe I should make goals for both, I guess we will see.

Random: FLOWERS

I got flowers last month from some of the worlds best people. I also got cards which equally make me happy, although I didn't post a picture of them. I save cards, sometimes I scrap book them or I just keep them around until I feel I don't need the comfort that they lend. Anway I got these flowers all about the same week while I was babysitting the Ashton kids. They were starting to wonder what was wrong with me. My sister sent the tulips from Cali and when I came home with a huge box to arrange them the 6 yr old, who also got flowers from her vacationing Dad that day, said hey why did you get flowers, it's not your birthday. Funny.I guess I didn't get alot of flowers growing up so they really mean something to me. I love flowers that is all. (Hint hint Jon that memo is to be burned into your brain)

Friends come to visit

Our family friends came into town for a quick visit on Sunday and we had lots of fun trying to entertain them. I tried to make danish pasteries again and they flopped but it's a tricky recipe. Maddie and Hinder were giggling in no time and apparently climbed into her crib together. I wish Jon would have gotten a picture of that! Destry and I were able to catch up and have some good laughs. Here's some pictures I caught at the end of the visit. The best snapshot of all the hugging going on. Hinder looks like such a little man here.
I thought this was a really good picture of our friends, not so much of me and Maddie. She was playing with some gum she found, yuck. Hinder is so cute and so is Destry who looked like she walked right off of Downeast's spring catalogue.

This was a long hug that started in the middle of the room and ended with Hinder tackeling Maddie on the couch. So funny. I can't wait for them to play again when they can communicate really well, or maybe just when Maddie can :)
